    Yasmine’s basic buttery scones

    I know we are only at the end of February but man I am feeling all the spring vibes at the moment. It’s like the second the sun is out I wanna be super productive. Like Hey – I have been hibernating all winter, but I’m awake now and I just wanna get all the stuff done. Paint the house – No problem! Gardening – No problem! Marie Kondo the shit out of my wardrobe – hell yes! Cook all my meals from scratch – move over Mary Berry, because I am the queen baker!

    You catch my drift…. After we left London I have been obsessing over perfectly made fluffy, buttery scones. The boyfriend keeps raving about how his nan makes the best scones, and well, I can’t have that..

    Sunday also marks ‘Fastelavn’ in Scandinavia and here in Norway we celebrate by stuffing our faces with ‘Fastelavn bun’ (also known in English as “shrovetide bun” or “lenten bun”), a round sweet roll usually covered with a dusting of icing sugar and filled with a variation whipped creams sometimes accompanied with jam. Not too dissimilar to tradition english scones. So if you are Norwegian and reading this, why not try making Yasmine’s basic buttery scones instead and mix things up a little?

    If you can’t get a hold of self-rising flour – you want to start with making some home made stuff. It’s super easy to make, and does make all the difference!

    Homemade self-rising flour

    Ingredients

    • 1 cup all-purpose flour
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons baking powder

    Stir or sift together the flour, salt, and baking powder. Voila! You have self-rising flour!

    Ingredients

    • 450g of your homemade self-raising flour
    • 2 tsp baking powder
    • 50g sugar
    • 120g butter cold and in pieces
    • 2 eggs
    • a little milk

    I am not great at keeping measurements… I kinda just adjust and wing it when I am cooking.. SAWY! So you might want to adjust based on your oven, flour, size of eggs, butter etc

    Method

    1. Preheat your oven to 220C/200C Fan and cover two baking trays with baking paper. (my oven runs very hot, so I have mine on 180C, you might want to adjust according to your ovnen)
    2. Put the flour, baking powder and sugar in a large bowl. Add the cubed butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
    3. Crack eggs into a measuring jug, then add enough milk to make the total of liquid 300ml/10fl oz. Stir the egg and milk into the flour – you want your dough to be soft and sticky so you might not need all the liquid. Try to save around 50ml for later.
    4. Dust your work surface with flour as well as your rolling pin. Knead lightly. Roll out to a rectangle about 2cm thick.
    5. Cut into as many rounds as possible with a round 5cm cutter and place them on the prepared baking trays. Brush the tops of the scones with the egg and milk mixture left in the jug.
    6. Bake for 12–15 minutes, or until the scones are well risen and a pale, golden-brown colour. Lift onto a wire rack to cool. Eat as fresh as possible.
    7. To serve, split the scones and serve with strawberry jam on the plain scones along with a good dollop of clotted cream.

    If you want to serve your scones at a later date, freeze as soon as they cool and defrost in microwave for about 30-45 seconds.

    You see the trouble with home renovations folks is that when you are perfectionist like me, they are never freaking ending.

    For months I have been dying to show you all our new home, the before, the afters, and all of the in between but alas instead I have avoided blogging and sharing all together. So here we are, approximately 8 months since my last blog post with nothing really substantial to show for. Well thats a lie, I have loads to show, but nothing that is finished.

    Our bathroom drawers are still missing handles, our kitchen cabinets have yet to be painted, the living room is missing pictures on the wall and dont even get me started on the bedroom.

    So in an attempt to tie up the shortest of the loose ends, I figured the best place to start was with an office tour. Mostly because that is basically the only room that is almost done…

    I obviously didn’t have enough foresight to tidy up around the desk before taking these pictures…. Ignore the wood chip blocks and the electric cables..

    See what I mean?! Perfectionist…

    Anyway….When it comes to home renovations, we are have tried to keep the cost down to minimum so a lot of what we have used has been bought second hand or from our favourite place on earth – IKEA’s Bargain corner! The floating shelf was actually brought with us from London!

    The desk cost us roughly £2 – the desk top is actually the top of a chest of drawers, and the legs we found in the loft.

    Our gold wall grid is old chicken fence wire leftover from when there were rabbits in the garden, found in the garage and spray painted gold. In hindsight, it would have been cheaper to just buy a gold wall grid because spray paint is expeeeensive.

    So here is where I am at life wise – my kitchen is in my living room, my new plant doesn’t fit the pot I bought but I refuse to accept it and I have yet again signed up to another gym, and by gym I mean the charity.     This year marks my 18th year as a contact lens wearer. 18 freaking years of being basically blind and I know what you are thinking – Did she honestly start wearing contact lenses at the age of 12? Well yes, yes I did. I hit puberty early and on top of already having braces, a pizza face, greasy hair and boobs, my mom decided that I did not need to add glasses to the list. Thanks, MOM! (Honestly, she is pretty brilliant!).

    When it comes to turning 30, I refuse to believe I am the only one who is feeling or has felt the pressure of turning 30. Growing up 30 was always set as the milestone. Your 30 before 30 lists, things to do before your 30. ‘By the time I am 30 I want to x,y,z’

    Why is that? What makes us automatically assume that by the time you are 30, life will have magically sorted itself out? And why does it happen by the time you turn 30? Why not 40? I mean, I spent the first half of my 20s partying ( as you do) and the second half panicking over getting closer to 30 and not having achieved any of my so-called goal list. With a busy schedule like that, how on earth was I supposed to even start achieving this completely unrealistic to do list?!

    Winter hair care tips

    As much as I don’t want to admit it……….. winter is still here, and with the cold months comes great responsibility to treat your hair with some added TLC.     Kleresca Skin Rejuvenation Treatment

    Pardon my smugness but I feel I have become the home expert of skincare. I have London Real Skin at The London Skin and Hair clinic to thank for that. Now I am grabbing for my facial SPF like it’s my trusty squash bottle!

    This week I will be getting my final Kleresca Skin Rejuvenation treatment and I have mixed feelings about it. Don’t worry I will be giving you a full rundown over on my youtube channel after but until you get that, I thought I would share with you an up close and personal view of what it looks and feels like – and of course what results I have seen so far.

    For those of you new to the table, Kleresca Skin Rejuvenation is a fairly new treatment available here in the UK. It claims to induce collagen production, Reducing pore size, eliminating fine lines and reducing signs of scars. Its a great 9 minute, non-invasive treatment. I have written an introduction post to the treatment, I suggest you check it out here

    Kleresca Skin Rejuvenation is inspired by photosynthesis. The technology works by stimulating your skin at the cellular level. Specific LED light waves interact with the patented photoconverter gel, resulting in the light being converted into dynamic, pulsing fluorescent energy that promotes the build-up of collagen.

    As I mentioned earlier I am off to have my fourth treatment this week and I can already notice quite a remarkable difference in my skin. Most noticeably is my overall complexion, and my angry wrinkle is almost gone! I mean – hello! I didn’t even need botox!

    So how does a treatment session work?

    After your first assessment appointment, your treatment appoints usually start with some photographs of your skin. This is to document how your skin is reacting and progressing. (Honestly, I have already had a sneaky peak at my ‘before’ pics, and SPOILER ALERT My skin has improved SO much!)

    1 . Vanessa from London Real Skin at The London Skin and Hair Clinic performs my treatments on me, and she starts by cleansing my skin. It’s very relaxing and doesn’t hurt one bit. It’s actually quite nice!

    2. Then the treatment is prepped. It only takes a few minutes, where Vannesa blends the two jars below together. It’s a VERY thick orange gel that gets spread on your skin. The best part? It has no smell. Perfect for those sensitve to perfumed products!

    3. Your eyes get covered in some protection lids so that your eyes are protected from the fluorescent lights. I really enjoy this, because if forces me to switch off and relax. I cant see my phone, I cant really do anything but just chill and I am ok with that!

    4. The gel is then applied to your face. When it is applied the gel feels cool and soothing. Like a super hypercharge hydration facial you do at home on a Sunday even while catching up on last weeks Celebs go dating. Best part so far about this facial? Still no pain!

    5. The fluorescent light is then turned on, and for 9 beautiful minutes, you get to switch off from the world and enjoy the sensation of having the sun on your face. At this point, I struggle to stay awake. The gel feels warm against my skin, in a nice way. Like somebody is giving my face a hug. I love this part. The gel, orange under the light slowly becomes more of a vibrant bright pink. Still no pain!

    6. The gel is then scrapped off very gently, your face is cleansed and some SPF is applied. Voila! You are a done! Now you can slap on some makeup and continue on with your day! It’s  as easy as that! The whole experience is extremely enjoyable and I kinda wish I was having more done.

     

    I am super excited to see the result after my last treatment but the final result won’t be for another 12 weeks as your skin is still working on inducing those collagen levels!     This treatment is perfect for anybody who has never had a facial before, who has a low pain threshold and who doesn’t have time for any ‘downtime’. I would recommend Kleresca Skin rejuvenation treatment to people that are concerned about their pores, their complexion, their fine lines (GOODBYE ANGRY WRINKLE AND MASSIVE CRATE PORE!) and want to plump up their skin by inducing collagen. Its never too early to start taking care of your skin. You cant turn back time, but you can slow it down slightly and prevent damage. It is also PERFECT for those of you who struggle with acne. Either its severe acne (Klerescca Acne) or like me, the odd adult spot.
