    Matcha cupcakes




    Ok so before you say anything, yes I can still appreciate the weekends, maybe not the bank holiday weekend but a regular weekend. Hell yes.
    Monday marks my 3rd week of unemployment, which took me by surprise. These weeks have gone so incredibly fast, and I have no shortage of things to fill my time with. Like deciding to make cupcakes. A matcha cupcake, with strawberry frosting. Say WHAAAAT? Hola Cheat day you sexy thing! Also they photograph better than Marilyn Monroe. I mean, check out these puppies! And you know, appreciate my flat lay skills. 


    They also mark the end of the Matcha week here on the blog, which is a little sad so I might just have to do one again soon. Anway I bet you’re a little jelly right now. I would be too if I were you. But fret not mon petit cheri ! I have the recipe for ya right here! I’m nice like that.

    Also don’t you judge me for my lack of piping skills. That shit is hard man!

    Ingredients Cupcakes

    1 and 1/2 cup all-purpose flour

    1 cup sugar

    1 1/2 tsp. baking powder

    1/2 tsp. salt

    1 tbsn. matcha powder

    1/2 cup unsalted butter, softened, cut into 1-inch cubes

    2 large eggs

    1/2 cup Almond Vanilla Milk

    Ingredients Frosting

    2 cup frosting sugar

    Half a tub of Cream Cheese

    1/4 cup chopped strawberries

    Method Cupcakes
    • Combine flours, sugar, baking powder, salt and matcha powder.
    • Add the butter
    • Whisk together the eggs, milk and vanilla.
    • Add the wet ingredients in 3 parts, beat until ingredients are incorporated but do not overbeat. Divide the batter evenly among liners, filling about 2/3 full. Bake until an inserted toothpick comes out clean, 17 – 20 minutes. Transfer to a wire rack and let cool completely.
    Method Frosting

    Mix together sugar and cream cheese with an electric mixer until it becomes froffy. (Yes I have made up a word)

    Slowly fold in chopped strawberries and lightly mix with mixer to make it all pink.

    Now eat your heart out baby!

    Kicking off Green Tea with – Homemade Matcha iced latte


    Alright beauties, its time to kick off Matcha week here on the blog. Why have I decided to base an entire week around green tea? Not only is green tea full of antioxidants and nutrients but it also helps improve brain function, fat loss, a lower risk of cancer and many other incredible benefits. Its like skinny in a form of a drink! Which is all super duper great, but to me green tea taste like cod liver oil. And nobody in the right mind wants to drink that for pleasure. It took a long long time to get used to drinking it and even now I much prefer lemon or mango green tea over the regular none flavored kind. So I decided to start looking into other ways I can get my green tea on, and in walked Matcha Lattes. I love love love love matcha lattes. It’s like a Chai Latte, but not as intense and green obviously.

    Only problem is, its like 25 degrees out. I don’t want a warm cozy cup of Matcha Latte. I want something cold and fresh. I want something that will cool me down.

    I introduce an Iced Matcha Green Tea Latte, pause for applause.
    Now you can find lots of recipes for this online, this is just my little twist.

    • 1 1/2 cup Vanilla almond milk (Diamond Breeze is on offer at Sainos right now for £1 – RUN RUN RUN RUN)
    • 1 teaspoons matcha green tea powder
    • 1 teaspoons honey (increase this if you feel the matcha is too over powering!)
    1. Place all ingredients in a blender and blend  until the matcha powder is dissolved, or put in a shaker and shake shake shake. Pour over ice.

    Voila! Iced Matcha latte! Yum yum yum! Healthy, and very low in kcal!


    You can even double and triple this recipe and store in the fridge.
    I’d say no more than 3 days…

    Just another manic monday


    Well not really. It might be Monday but for me, it’s certainly not manic… more like magic. This is kinda what I am loving at the moment, being a week into the life of unemployment. I love being the boss of my own time, my own schedule, my own life. Enjoying the sunshine, making healthy choices and pushing my body at the gym. I just feel so much like me right now, and its been a long time coming. Life is just so exciting right now, and I know this sounds like such a cliche but I just feel so freaking alive. The last week flew by, seriously just flew by. Which took me slightly by surprise, in a good way of course!


    There is also a lot of things happening on this blog this week which is making me so excited! I am hosting my first giveaway in collaboration with Blink Publishing and The Real Greek (so stay tuned for some awesome freebies!) – and this week it’s also Green Tea week on the blog! Because who doesn’t like feeling like they are super healthy while drinking something that usually taste of cod liver oil? Or is that just me? Anyway, this week I’m testing and sharing with you 3 of my favorite ways of using green tea in cooking. Sound good to you? Sounds great to me! Mostly because I love free stuff… (give me aaaalll the stuff)
